Leftover Pasta Omelette

Give an Italian twist to your daily morning omelette. It is a great recipe to make with any leftover pasta from previous night. This recipe is a perfect balance of flavour and protein for the right breakfast – a pasta omelette.
Ingredients
- 1 Box Chef’s Kiss Pesto Genovese Pasta meal kit or 1 Box Chef’s Kiss Sundried Tomato Pasta meal kit or 1 Box Chef’s Kiss Chunky Arrabbiata Pasta meal kit (💡Use leftover pasta from previous night too. The dish will taste just as good.)
- 1 large eggs
Method
- Empty the pasta pouch into a pot of salted boiling water. Cook for 10 min or until the pasta is al dente . Once the pasta is done cooking, save a cup full of water from the pasta before you drain it.
- Add the drained pasta and sauce (pesto or arrabbiata), into a pan. Mix and combine the ingredients well. Warm the pasta for 30 seconds.
- 💡Using leftover pasta? Skip steps 1 & 2. The dish will taste just as good.
- Crack 1 egg into a small bowl and whisk well until well combined. Season with salt and pepper and pour onto a warm pan with a knob of butter.
- Once cooked, add the pasta onto the omelette and top with grated parmesan.
- When the edges begin to turn crispy, gently fold the omelette into half.
