‘Marry Me’ Mushroom Penne

Who said you cannot make a gourmet meal at home. This recipe is just the perfect gourmet dinner you need to treat yourself.

Ingredients

  • 1 Box Carbonara Style Pasta Meal Kit
  • 2 cup button mushrooms, whole
  • 1 cup baby spinach, leaves only
  • 1 tbsp cooking oil
  • 1 tsp butter
  • 3 cloves garlic, minced
  • 1/2 onion, minced
  • 3 sun-dried tomatoes halves, chopped
  • 1 cup heavy cream
  • 1 cup vegetable/chicken stock
  • 1/4 cup parmesan cheese
  • fresh basil, for garnish

Method

  1. Empty the pasta pouch into a pot of salted boiling water. Cook for 10 min or until the pasta is al dente. Once the pasta is done cooking, save a cup full of water from the pasta before you drain it.
  2. Sprinkle a pinch of salt and pepper onto the mushrooms, and toss to coat.
  3. To a pan, add oil. Then add the mushrooms and pan fry to cook for about 8-10 minutes, or until cooked through. Remove from the pan.
  4. Using the same pan, add butter, minced onions and minced garlic. Stir fry to combine, scraping the bottom of the pan to liftoffany residual flavour from the mushrooms.
  5. Add chopped sun-dried tomatoes and the oil from the sun dried tomatoes if there is any. Stir fry until fragrant.
  6. Add heavy cream next and vegetable/chicken stock. Stir to combine and allow this mixture to come to a boil.
  7. Once it boils, add the pasta, a dash of the pasta water and the spinach. Add the parmesan cheese. Stir to combine.
  8. Once combined, add back the mushrooms over the pasta. Garnish with fresh basil. Serve immediately.
